In this program, a stable isotope identification method of exogenous edible alcohol added to solid liquor has been invented, which breaks through the long-standing technical bottleneck in the previous liquor quality standards and supervision system. It is a major technological progress in the field of liquor quality safety and product authenticity identification, and protects the legitimate rights and interests of consumers and formal production enterprises. In order to promote the inclusive, healthy and orderly development of the traditional liquor industry and the new liquor industry, as well as the internationalization process of the liquor industry, it has established the support of technical standards and regulations and created a good market regulatory environment. The main technical contents include: first, to develop an analytical method for rapid and accurate determination of stable isotope composition of target components in liquor, and to draft industry standards; second, to study and analyze the distribution of stable isotopes in traditional solid-state fermentation liquor, and to establish a stable isotope database for traditional solid-state liquor-making. Third, to establish the identification technology of traditional solid-state liquor brewing with exogenous edible alcohol to reach the international advanced level of similar research.
