Development and application of key technology and safety control system for high quality and low consumption brewing of yellow rice wine

The project focuses on the key technical measures and standards for the control of biotoxins such as pesticide residues, biogenic amines, ethyl carbamate (GC) and other potential safety risk factors in yellow rice wine. The project establishes the detection method and monitoring technical system of pesticide residues in yellow rice wine and its raw materials, biogenic amines, ethyl carbamate (EC) and their precursors in yellow rice wine, tracks and studies the changes of biogenic amines and EC contents in rice wine production, discusses the relationship between amino acids, urea and other components in yellow rice wine raw materials and EC metabolism, and systematically studies the risk key points and quality and safety control points in the production process of yellow rice wine. The technical system and relatively perfect standard system of comprehensive prevention and control of quality and safety in yellow rice wine production are constructed. The popularization and application of this achievement will provide an important technical support for effectively controlling and gradually reducing the content of EC in yellow rice wine and improving the overall safety level of yellow rice wine industry. The project has won 2 achievement appraisal certificates and 1 provincial and ministerial award.
