Technical service for the standardization of industrial enzyme preparations

Service Introduction

Enzyme preparation is one of the technical cores of modern food industry fermentation, in order to solve the problems plaguing the industry such as backward enzyme preparation evaluation technology and lack of unified specification for industrialization. By studying and sorting out the management system and standard regulations at home and abroad, the development plan of China's enzyme preparation standard system is proposed. Establish standard determination methods for industrial fermentation enzyme preparations in China, set up a standard sample library, standard testing methods and standard working groups for enzyme preparations, study standardized evaluation techniques for enzyme preparation product characteristics, and promote the harmonization of China's enzyme preparation standard system with international standards and unified technical content. Research on the safety evaluation technology of industrial enzyme preparations and their production strains, establish key quality control indicators and analysis methods for enzyme preparation products, conduct research on the safety evaluation of important new enzyme preparation varieties in China's industry, and promote their safe and compliant use in the food and feed industries. We have supported the development of standards such as “Technical Guidelines for the Determination of Viability of Enzyme Preparations for Industrial Use” (GB/T 35538-2017), “National Standard for Food Safety Food Additives Enzyme Preparations for the Food Industry “(GB1886.173-2016) and “National Standard for Food Safety Food Additives Lysozyme “(GB1886.257-2016) to promote the quality of enzyme preparation products in the industry and ealuation methods will be harmonized. Develop and establish a standard system for industrial enzyme preparations that is in line with international standards, and build a platform for research and standardization of industrial enzyme preparation evaluation technology to support the industrial development of biomanufacturing in China.

Projects undertaken: "Construction of Standard System for Biological Manufacturing (Enzyme Preparation) and Development of Important Standards", "Research on Key Technologies for Quality Evaluation of Enzyme Preparation Standards for Food Processing", etc.

Standards established: More than 10 standards such as “National Food Safety Standards Food Additives Enzyme Preparations for Food Industry”, “Technical Guidelines for the Determination of Enzyme Preparations for Industry”, “Good Manufacturing Practice for Enzyme Preparations for Food Processing Enterprises”, “Protein Enzyme Preparations”, “Lipase Preparations”, “α-Amylase Preparations”, etc.

Research on methods: More than 10 methods for determination of enzyme activity of α-amylase, α-acetyl lactate decarboxylase, protease, pectinase, lipase, fructosyltransferase, pruraminidase, transglucosidase, lysozyme, etc., and we will continue to carry out improvement and update of existing methods and research and development of new species evaluation methods.
